Black Eyed Pea Chicken Chili


Eat this Black Eyed Pea Chicken Chili on New Year's Day and it will bring you good luck all year through. Or, at least while your eating it. That last part is a claim I can 100% guarantee!
Black Eyed Pea Chicken Chili

For the past few years, I've tried to come up with recipes that utilize black-eyed peas as an ingredient because of their "good luck" properties in ringing in a new year with prosperity and good fortune.

Black Eyed Pea Chicken Chili

Last year I made this Good Luck Black Eyed Salsa, and I must say that 2015 was not that bad (all things considered). However, the salsa was great, and so is this chili!!

BLACK EYED PEA CHICKEN CHILI   {PRINT THIS RECIPE}
Servings:  6-8     Prep Time:  15 minutes       Cook Time:  30 minutes

6 slices bacon, cut into 1" pieces
2 pounds boneless, skinless chicken thighs, cut into bite sized pieces
1 teaspoon salt
½ teaspoon pepper
1 large onion, chopped
3 cloves garlic, minced
1 teaspoon ground coriander
2 teaspoons ground roasted cumin
2 tablespoons butter
2 tablespoons flour
4 cups chicken broth (I use low-sodium)
1 can (4 ounces) fire roasted jalapenos
3 cans black eyed peas, drained and rinsed
1½ cup frozen, chopped spinach

-In a large stock pot, cook the bacon over medium/high heat until almost crisp. Reduce the heat to to medium. Add the chicken, salt and pepper, and cook, stirring occasionally for approximately 5 minutes.

-Add in the onion, garlic, coriander, cumin, and butter. Cook, stirring occasionally until the onion is soft (approximately 3 minutes). Stir in the flour and cook, stirring occasionally for an additional 1-2 minutes.

-Slowly add in the chicken broth and the jalapenos. Cook, stirring occasionally until the sauce thickens and then stir in the frozen spinach.

-Lower the heat to medium/low and simmer for 30 minutes.

-Ladle the chili into bowls. Serve and enjoy!
