Peanut Butter Chocolate Chip Ice Cream Recipe

PEANUT BUTTER CHOCOLATE CHIP ICE CREAM    {PRINT THIS RECIPE}
Makes: approximately 2 quarts     Prep Time: 10 minutes       Freeze Time: 40 minutes, minimum

1 1/4 cups creamy peanut butter
1/2 cup granulated sugar
1/2 teaspoon kosher salt
2 teaspoons pure vanilla extract
2 cups half-and-half
2 cups 2% milk
1 can sweetened condensed milk
2 1/2 cups milk chocolate chips

-Using a hand held mixer, or a stand mixer on medium speed with the paddle attachment, cream together the peanut butter, sugar, salt and vanilla until smooth.
-Adjust the mixer speed to low and slowly beat in the half-and-half, 2% milk and sweetened condensed milk. Continue to blend until the mixture is thoroughly combined.
-Pour the peanut butter mixture into an ice cream maker and freeze according to the manufactures directions. (approximately 35-40 minutes) At this point the ice cream will be soft.
-Transfer the ice cream to a large, lidded container, and stir in the milk chocolate chips.
-The ice cream can be eaten now, or you can cover and freeze it for an additional 4-6 hours (overnight is ideal) for a harder, scoopable ice cream.
-Enjoy!
