With oatmeal cookies being one of my all time favorite cookies and cinnamon being one of my all time favorite holiday tastes, I've combined the two into one deliciously flavorful Cinnamon Oatmeal Cookie...I hope you'll agree.
CINNAMON OATMEAL COOKIES {PRINT THIS RECIPE}
Yield: 4 1/2 dozen Prep Time: 15 minutes Bake time: 15-18 minutes
1 cup butter, softened
1 cup granulated sugar
1 cup packed brown sugar
2 eggs, at room temperature
2 teaspoons pure vanilla extract
2 cups flour
1 teaspoon baking soda
1 teaspoon salt
3 cups quick cook oats
2 cups cinnamon imperials
-Preheat oven to 350 degrees
-In a large bowl, cream together the butter and sugars.
-Beat in the eggs, one at a time and add the vanilla.
-Stir in the flour, baking soda, salt and oats until just combined.
-Stir in the cinnamon candies.
-Drop the dough by rounded tablespoons onto parchment lined baking sheets.
-Bake for 15-18 minutes or until the cookies are lightly browned.
-Remove to baking rack to cool completely.
These are crispy, crunchy, cinnamony and packed with great oatmeal flavor ~ Everything a holiday cookie should be! Santa would be thrilled to receive these on Christmas Eve! Ho!Ho!Ho!
Speaking of Santa, don't forget to leave him a nice cup of hot chocolate or milk along with the plate of cookies you'll be setting out. Also, add a few carrots for the reindeer too...they all work so hard on Christmas Eve you know ;)
