Breaded Baked Italian Chicken Legs

This is my updated riff on the old favorite of Shake 'n Bake chicken from when I was growing up, way back when.

This recipe actually has nothing at all to do with the flavors of  Shake 'n Bake (which was far too salty for my tastes), its just that all the ingredients are put into a bag, the chicken is added, and then its shaken to coat, and then baked. What could be easier?

I'll be honest with you, sometimes trying to take mouthwatering "beauty shots" of the food I make for the blog is harder for me than the making of the food itself. Some foods just don't want to cooperate with the camera, and these Breaded Baked Italian Chicken Legs are one of those non-cooperative foods.

Having said that, I realize that what's more important than how pretty the pictures are is how the food actually tastes, and how easy the recipe is to follow.

These Breaded Baked Italian Chicken Legs are so moist and tasty, and the recipe is so easy to follow, that the fact that the pictures aren't exactly mouthwatering is not bothering me all that much...Well, that sounds good in theory, right? Honestly, I wish the pictures were a whole lot more mouthwatering then they actually are. Still though, these are darned tasty chicken legs (even if the pictures aren't) so I do hope you'll make them.

Yield: 12 chicken legs      Prep Time:  5-7 minutes     Bake Time:  45 minutes teaspo

1 cup seasoned bread crumbs
1 cup Parmesan cheese
1 teaspoon salt
½ teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon dried basil
1 teaspoon drieg oregano
1  family size package chicken drumsticks (4 pounds)
olive oil spray

-Preheat oven to 350 degrees.

-Place the first 7 ingredients into a zip top bag. Shake to combine.

-Add the chicken drumsticks to the bread crumb bag (half at a time), and shake well to coat. Place the coated drumsticks on a baking sheet that has been lined with a baking rack, and sprinkle the chicken with remaining crumbs if desired.

-Spray the coated drumsticks with a light spray of olive oil and bake in a preheated oven for 45 minutes or until the legs are golden brown and the internal temperature of the chicken legs are 165 degrees. *Note - If using this breading for pieces other than legs, adjust your cooking time accordingly but make sure the internal temperature of the chicken is still 165 degrees.

-Serve hot or cold, and package well to go on a picnic.
