No-Bake Shortbread Cookie Truffles


Rich and buttery shortbread cookies are crumbled, mixed with cream cheese, rolled into balls, and then dipped in white chocolate and sprinkles.  They're a no-bake treat that everyone will love.

Shortbread is my favorite type of cookie. I just love the simplicity of the ingredients, and yet its complexity of taste.
It was only a few short weeks ago that I shared this Traditional Irish Shortbread recipe with you for St. Patrick's Day.


It was these same broken shards of cookies that I used to make these Shortbread Cookie Truffles. After all, a twofer is never a bad thing, right? However, store bought shortbread cookies work just as well with this recipe so if you're not a baker, or just don't have the time on hand to bake from scratch, don't let that stop you from making these delicious no-bake truffles.

NO-BAKE SHORTBREAD COOKIE TRUFFLES   {PRINT THIS RECIPE}
Makes:   24 truffles      

3 cups finely ground shortbread cookie crumbs
6 ounces cream cheese, softened to room temperature
12 ounces white chocolate chips
Jimmies or sprinkles for topping

-In a food processor or large bowl with a hand mixer, blend together the cookie crumbs and cream cheese until the mixture will hold together when pressed into a ball.

-Roll the dough into golf ball sized balls. Place the rolled balls onto parchement lined baking sheet and chill for 15-20 minutes.

-Melt the white chocolate chips in a microwave safe bowl on 50% power for 2-3 minutes, stirring occasionally.

-Dip the chilled cookies into the melted chocolate and roll to completely cover. Use a fork to remove the truffle from the chocolate and allow the excess chocolate to fall back into the bowl. Immediately sprinkle the wet chocolate with sprinkles or jimmies. Repeat the same process with the additional truffles.

-Return the truffles back to the refrigerator and chill until ready to serve. These are best served chilled but they're also taste delicious at room temperature.
