I really love these McCormick Skillet Sauces and have been enjoying the way they help me prepare and put a delicious, nutritious family meal on the table in only minutes. This fact is especially sweet for a busy #WeekdaySupper, and with the McCormick name I trust to help me do that I feel like a dinnertime hero!
This sandwich is my take on a sloppy Joe when crossed with chicken Parmesan. The result is a tender; flavorful lose meat chicken sandwich that simmers in McCormick's delicious Sicilian Chicken with Tomato, Basil, and Garlic skillet sauce. It's then topped with Parmesan cheese before being scooped onto a toasted bun! Mangia! Mangia!

Sicilian Chicken is one of McCormick's seven new skillet sauces that are now available in your favorite market. The other skillet sauce packet flavors are: Smoky Applewood BBQ Chicken with Bacon. Taco with Chipotle and Garlic. Sesame Chicken Stir-Fry. Fire Roasted Chili. And Fajita with Roasted Chile, Garlic and Lime.

SLOPPY SKILLET CHICKEN PARMESAN   {PRINT THIS RECIPE}
Makes:  6-8 large sandwiches       Prep and Cook Time: 20 minutes

1 tablespoon olive oil (extra virgin not necessary)
2 pounds ground chicken (I made my own in the food processor with chicken breast, shown below)
1 ½ kosher salt
1 teaspoon black pepper
1 ½ teaspoon dried oregano, pinched with fingers to release oils
1 ½ teaspoon dried basil, pinched with fingers to release oils
3 cloves garlic, minced
1 medium onion, minced
1 teaspoon fennel seed
1 package McCormick Sicilian Chicken Skillet Sauce
6 ounces tomato paste
1 cups shredded mozzarella
½ cup shredded Parmesan cheese
8 hamburger buns
2 tablespoons butter

-To make ground chicken, place large pieces of cut up/partially frozen chicken breast in a food processor. Pulse until the chicken has the texture you're looking for.
-In a large skillet over medium/high heat cook the ground chicken in the olive oil for approximately 2-3 minutes.
-Add the salt, pepper, oregano, basil, garlic, onion and fennel seed and cook, stirring occasionally until the chicken is no longer pink, and the onions are soft and translucent in color (approximately 5 more minutes).
-Pour in the McCormick's Sicilian Chicken Skillet Sauce and stir in the tomato paste to combine.
-Cook on medium, stirring occasionally to heat through. Sprinkle with the Parmesan cheese to finish.
-Meanwhile, butter both sides of the cut buns and place them cut side down on another skillet to brown.
-Place a heaping spoonful of the chicken mixture on the bun and top with the mozzarella cheese.
-Serve and enjoy.

To make your own ground chicken, place cut partially frozen chicken breasts into pieces and place in a food processor. Pulse to grind until you get the texture you're happy with.  *Note - This step is purley optional for this recipe. Store bought ground chicken works wonderfully well.

Cook the ground chicken in a large skillet for approximately 3-5 minutes, stirring occasionally. Add in the salt, pepper, oregano, basil, garlic, onion and fennel seed. Continue cooking and stirring until the chicken is cooked through and is no longer pink in center.

Add the skillet sauce into the cooked, ground chicken and then stir in the tomato paste. Heat through and add the Parmesan cheese over top.

To serve, spoon the chicken Parmesan onto buttered toasted buns and top with mozzarella cheese.
