Since this month's #TwelveLoaves challenge is all about summer herbs, I decided to make a quick bread that I'm calling "Thyme for Beer Bread" which uses plenty of fresh garden thyme which I snipped right from our own backyard herb garden.

This photo was taken shortly after I'd planted all my herbs in late May. As of today, my herbs are wildly overgrown and out of control. Every year I promise myself not to let that happen and that I'll take better care to keep them tended to and weed free.  And yet every year, the herb garden (along with our vegetable garden) gets the better of me and makes me feel much like a foolish slacker. This year I've even promised myself that I'm going to actually dry some of the garden herbs to use during the long, cold winter months. HA! We'll see how far I actually get with that!  Here's to my good intentions... ;)

If you're a fan of beer bread but have always made it out of those packaged box mixes...give it up and try making it from scratch! You'll be amazed at how fast and easy it is to prepare and that it seriously takes about the same time to make a fresh homemade beer bread than it does to open up that silly box.

Thyme for Beer Bread Recipe via

Yield: 1 loaf    Prep Time: 5 minutes    Bake Time: 45-50 minutes

3 cups all-purpose flour
4 ½ teaspoons baking powder
1 ½ teaspoons salt
2 teaspoons garlic powder
1 ½ tablespoons fresh thyme leaves
1/3 cup granulated sugar
5 tablespoons butter, melted (divided)
1 12 ounce can or bottle of beer (the cheaper the better)

-Preheat oven to 350 degrees.
-Spray a 9x5 loaf pan with cooking spray.
-In a large bowl, whisk together the flour, baking powder, salt, garlic powder, thyme leaves and sugar.
-Pour in the beer and 3 tablespoons of the melted butter. Stir with a spoon until just combined and a stiff batter has been formed.
-Scrape the batter into the prepared loaf pan and spread the batter as evenly as possible in the pan.
-Brush the top of the loaf with the remaining 2 tablespoons of melted butter.
-Bake in a preheat oven for 45-50 minutes or until the loaf is a lovely golden brown in color and when a toothpick inserted in the center comes out clean.
-Turn the loaf out onto a wire rack and cool completely before slicing.
