Chicken Broccoli Alfredo Pizza Recipe

Don't you just love a dish that does double duty by combining several of your favorite recipes and flavors into one amazing meal? That's what this Chicken Broccoli Alfredo Pizza is. A combination of pizza, along with chicken Alfredo, along with roasted broccoli. Can it get any better? I think not!

When making this pizza, you can either make your own pizza dough (I'm including my recipe below) or you can buy some frozen pizza dough from the store or you can even buy one of those pre-baked pizza crusts. I adore all three of these options and each one will work perfectly for this dish, it just depends on how much time you happen to have on your hands on any given day.

A few other things I think you're really going to love about this pizza is that it takes advantage of store bought rotisserie chicken, which is something I'm coming to rely on a few times a month to help get dinner on the table in a relatively quickly manor. Plus, I really enjoy munching on it while I'm taking the meat off the bones.
I dare you not to snack on it. It's virtually impossible not to!

*Note - The Alfredo sauce recipe that follows makes 2 cups of sauce and comes together in a flash on the stove top. Because this recipe only calls for about 1 cup, you'll have another cup leftover to pour over pasta later in the week. Double duty indeed.

And last but certainly not least... roasted broccoli! The nutty flavor when you roast broccoli is an amazing compliment to this family-pleasing dinner. Of course, you don't need to roast the broccoli if you're really short on time. As an alternative you can certainly add some frozen broccoli that's been thawed and drained, but if you have the time, I highly you suggest you pop some in the oven to roast up while you prepare the Alfredo sauce. I promise, You won't be sorry.

Chicken Broccoli Alfredo Pizza Recipe

CHICKEN BROCCOLI ALFREDO PIZZA   {PRINT THIS RECIPE}
Yield: 1 large pizza     Prep Time: Homemade dough - 90 minutes       Bake Time: 30-45 minutes
                                                   Frozen pizza dough - 90 minutes
                                                   Pre-baked pizza crust - 20 minutes

1 pound pizza dough  (recipe follows for homemade) OR one Pre-baked pizza crust.
1 cup Alfredo sauce (recipe follows)
2 cups shredded rotisserie chicken
1½ cups roasted broccoli (recipe follows)
1 tablespoon corn meal
1 1/2 cups shredded Mozzarella cheese
1/4 cup shredded Parmesan cheese
season with black pepper

-Preheat oven to 375 degrees.
-Sprinkle the cornmeal on a pizza stone or baking sheet.
-Roll the dough out onto a pizza stone or baking sheet in whatever shape you prefer to approximately 1/4" thickness OR place a pre-baked pizza crust on the stone or baking sheet.
-Top the pizza dough with approximately 1 cup of the Alfredo sauce and spread the sauce evenly over the crust, leaving about 1/4" border.
-Layer the shredded chicken evenly over the sauce and then layer the broccoli evenly over the pizza.
-Sprinkle the entire pizza evenly with the mozzarella cheese and the Parmesan.
-Season liberally with black pepper.
-Bake in a preheated oven for approximately 30-45 minutes depending on the kind of crust your using. *Note -  If you're using raw pizza dough, the longer bake time will be required.
-Slice and serve

Hopefully the following step-by-step photos will clarify any questions you may have regarding this recipe. Please note that I'll be posting the recipes for the homemade pizza dough, Alfredo sauce and Roasted Broccoli after the photos.

Roll or pat the dough out into the shape of your choice on a pizza stone or a baking sheet.



Prepare the Alfredo sauce on the stove top until the consistency of thick pancake batter. Spread the Alfredo sauce evenly over the dough.





Top the pizza with the shredded chicken, roasted broccoli, mozzarella and Parmesan cheeses




Bake, slice, serve and enjoy!

Chicken Broccoli Alfredo Pizza Recipe

HOMEMADE PIZZA DOUGH   {PRINT THIS RECIPE}
Yield: 1 large pizza dough     Prep Time: 1 hour (includes rise time)   Bake Time: 30 minutes (depending on toppings)

3/4 cup warm water (105-115 degrees)
1 envelope active dry yeast (2 1/4 teaspoons)
1 teaspoon honey
1 cup all-purpose flour
1 cup whole wheat flour
1 tablespoon granulated sugar
1 teaspoon salt
3 tablespoons olive oil

-Dissolve the yeast in the warm water. Add the honey and allow the mixture to sit for 5 minutes until it gets foamy.
-In a large bowl (I used a stand mixer fitted with a dough hook) blend together the flours, sugar and salt.
-Pour in the yeast mixture and the oil. Knead until all the flour is incorporated. *Note - if the dough seems too sticky (weather conditions can effect the dough), knead in more flour (1 tablespoon at at time), until the dough is smooth and elastic.
-Turn the dough out onto a lightly floured surface and hand knead for about 2 minutes.
-Add the dough to a lightly oiled bowl, cover with plastic wrap and allow the dough to double in volume in a warm, draft free place for about 45 minutes.
-Punch the dough down and roll to into your desired pizza shape.
-Top with your favorite topping and bake.

ROASTED BROCCOLI   {PRINT THIS RECIPE}
Yield: 2 cups      Prep Time: 2-3 minutes     Bake Time: 15-20 minutes

2 cups broccoli florets
2 tablespoons olive oil
1/4 teaspoon salt
1/8 teaspoon pepper

-Preheat oven to 375 degrees
-Spread the broccoli out on a baking sheet (I like to cover mine in foil for easier clean-up).
-Drizzle with olive oil and season with salt and pepper.
-Roast in a preheated oven for 15-20 minutes.
*Note - If you'd like to make more than 2 cups, just increase the amount of everything, including the roasting time. Just make sure you keep the broccoli in a single layer on the baking sheet.

HOMEMADE ALFREDO SAUCE    {PRINT THIS RECIPE}
Yield: 2 cups      Prep Time: 10 minutes

6 tablespoons butter
6 ounces reduced fat cream cheese
2 teaspoons garlic powder
1 1/3 cup milk
1 cup grated Parmesan cheese
1/8 teaspoon black pepper

-Melt the butter and cream cheese in a small saucepan over medium heat.
-Whisk in the garlic powder and milk. Whisk thoroughly to combine.
-Whisk in the Parmesan cheese and black pepper.
-Cook to thicken and add a tad more milk if the sauce seems to thick for your application.
*Note - You can divide this sauce into separate containers and use 1 cup for the Chicken Broccoli Alfredo Pizza, and store the second cup in the fridge for another recipe later in the week.
