Peach and Sage Sorbet

With summer peaches being abundant this time of year, I wanted to take full advantage of their sweet, pungent flavor and pair them with some earthy garden sage to make this healthy Peach and Sage Sorbet. I think it must have been a peach fuzz thing that made me think they would match well together...and, I was right! The flavor of this fresh sorbet is almost the same as biting into a soft ripe peach, but it has the mildest hint of sage, which, I'm happy to report, is a very pleasant flavor compliment to peach...Who knew? LOL

This Peach and Sage Sorbet could not be easier to make. As I'm sure you know, sorbet has only a minimal amount of sugar which makes it the perfect dessert or snack for when you're looking for something sweet, but don't want to sabotage yourself by eating a big bowl of ice cream or sherbet, that has twice as much sugar and calories.

If the thought of removing the skin from a peach is daunting to you, let me assure you that it's a very, very simple process that only takes a pot of boiling water, a bowl of ice water and a pairing knife.

Here's the fast and easy way to remove the skin off a peach...Do it once and you'll be a pro for life :)

-Bring a pot of water to boil over high heat.
-In a large bowl, add enough ice and water to make an ice bath.
-Use a pairing knife to score an X into the bottom of each peach.
-Use a slotted spoon to gently lower the peaches into the boiling water.
-Allow the peaches to sit in the boiling water for approximately 30 seconds.
-Use the slotted spoon to remove the peaches from the pot and carefully place them in the ice bath.
-Use the paring knife to carefully peel the skin off the peach starting where the X was cut on the bottom.

Yield: 1 quart     Prep Time: 20 minutes      Freeze time: 30+ minutes

5 ripe peaches sliced, with skin removed (see above instructions)
pinch salt
3/4 cup water
4 tablespoons granulated sugar
2 tablespoons lime juice (2 large, juicy, limes)
4-5 large sage sage leaves

-In a medium saucepan, heat the water, sugar, lime juice and sage leaves until the sugar is completely dissolved. Remove and discard the sage. Cool the sugar mixture slightly.
-Peel and slice the peaches, discard the pit and peels
-Place the sliced peaches in a food processor and add the salt.
-Pour the cooled sugar mixture over the peaches in the food processor and process until smooth.
-Pour the peach mixture into an ice cream freezer and freeze according to manufactures instructions.
-Transfer the sorbet to a freezer container and freeze for an additional 2-4 hours.
-Serve and enjoy!
