Fried Rice Frittata Reicpe

We don't do a lot of carry out food in our house, but when we do order in, my favorite is Chinese! Just recently for my birthday we ordered in from our favorite local Chinese restaurant, and as we always do, we ordered WAY too much food!

In a last ditch effort to use up our over abundant supply of pork fried rice, I came up with the idea of a "Fried Rice Frittata". My original idea was to make individual "Rice Patties" that would be fried in oil, but my lack of energy that particular day had me change my mind to an all-in-one casserole type leftover dish that would be a lot less fuss.


The results of this Fried Rice Frittata may not be the best looking dish I've ever created but it sure was a fun dish to bring to the table and the taste was just the same as the original pork fried rice we love, only in a different form.

FRIED RICE FRITTATA       {PRINT THIS RECIPE}
Serves:  8     Prep time: 5 minutes       Bake time: 50 minutes

5 cups fried rice (I used leftovers)
8 eggs
1/4 water
1 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon low sodium soy sauce
1/2 cup sliced scallions, plus additional for garnish

-Preheat oven to 350 degrees.
-Place the fried rice in a large bowl.
-In a medium bowl, whisk together the eggs, water, salt, pepper, soy sauce and scallions.
-Pour the egg mixture into the fried rice and stir to combine.
-Spray a 9" pie pan with cooking spray and pour the rice and egg mixture into the pie pan.
-Place the pie pan on a baking sheet and bake the frittata in the preheat oven for 50 minutes.
-The frittata is done when a toothpick inserted in the middle comes out clean.
-Allow the frittata to cool on a wire rack at least 10 minutes and then slice and serve with the additional scallions to garnish.

It may be a little funny looking and not something you're familiar with in terms of fried rice, but the good news is ... a Fried Rice Frittata is a whole lot easier to eat with chop sticks. LOL!!!
