You never know when inspiration will hit.
For me it was a day when I was making my favorite guacamole recipe and my husband was standing at the kitchen counter cracking into a hard boiled egg.
Hmmmmm. Why not?
They may not be the prettiest thing you've ever seen on a plate but trust me when I tell you how delicious they are!

This is not so much a recipe as it is a method of deliciousness.
Just mash a few egg yolks into your favorite guacamole and fill your hard boiled egg whites.
Have you ever noticed how the inside of an avocado and the inside of a hard boiled egg are so very similar looking?... I guess that's why they're a match made in heaven :)
