Sloppy José Recipe

With necessity being the mother of invention, this recipe was born out of my need to use up some bulk pork sausage that I had previously thawed, and also to combine some pantry items that had been calling my name each and every time I opened the cabinet.  Let me tell you, those little cans of fire roasted chilies can be mighty persistent! 



SLOPPY JOSE       {PRINT THIS RECIPE}

6-8 servings Preparation time: 20 minutes
1 pound of bulk pork sausage
1 tablespoon olive oil
1 red onion, chopped
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon garlic powder
2  4oz. cans of fire roasted chilies
1 15 oz. can of black beans, drained
1 tablespoon chili powder
1 teaspoon ground coriander
1 teaspoon smoked cumin
1/2 teaspoon ground red pepper
3 tablespoons tomato paste
1 28 oz. can crushed tomatoes
Juice of 1 lime
3 green onions, diced (garnish)
1 cup shredded jack cheese (garnish)
Hamburger buns
-In a large skillet over medium high heat, brown the pork sausage with the olive oil until no longer pink.
-Add the red onion, salt, pepper and garlic powder, stirring to combine.
-Turn the heat down to medium.
-Add the fire roasted chilies, black beans, chili powder, coriander, cumin, red pepper, tomato paste and crushed
tomatoes.
-Stir well to combine and continue cooking for approximately 10 minutes (As it cooks down, it will thicken).
-Add the lime juice just before removing from the heat and mix thoroughly.
-In another skillet, over medium high heat, toast the hamburger buns cut side down for a few minutes each.
-Spoon the Sloppy José mixture onto the toasted buns and garnish with the green onions and jack cheese.


Serve these tasty sandwiches with some chips and guacamole and you've got yourself a wonderful weeknight meal with your new best friend, José!!!  See?
HAHA! Get it?  Please forgive my poor attempt at Spanish humor but do try my recipe.  It's a good one!
