Pumpkin Mash

It's finally October 1st and 'Tis the season.

No, not THAT season, not yet anyway...

It's PUMPKIN season!  Woo, Hoo!

I have a complete love of all things pumpkins.  Pumpkins and leaves.

The sizes, the shapes, the colors (especially the orange ones), and as of the past few years... the taste (not of the leaves of course).

Here is an idea you may or may not have already though of in your own Autumn kitchen.

How about mixing some canned pumpkin in with your mashed potatoes???  What's that you say?

Mix in some canned pumpkin with your mashed potatoes!!!  Eureka!

You'll be surprised at the slight but noticeable change it gives them, and the slight but noticeable orange hue it gives your dinner plate.  So lovely!

All you do is take your own recipe for mashed potatoes, or you can use the already made mashed potatoes (I won't tell).

I used Yukon gold fingerling's, butter, milk, sour cream, salt and pepper and added about 1-1/2 cups of pumpkin pureĆ© (not pumpkin pie mix) into the mix.  If you feel really crazy, why not mix in some cream cheese and maybe a dash of nutmeg too.  How about some Parmesan cheese? Or some....(the possibilities are endless)

Next, do the pumpkin mash and you're all set to serve. 

I actually made these last year and for whatever reason, didn't post them. 

I also don't remember why I used the fingerling potatoes (odd choice, but there must have been a reason at the time).  You can use whatever kind of potatoes you like best for your mash.  No rules, just food.
